This is measured in mugs so no scales needed, do use the same mug for all the ingredients however!
1 mug of: All Bran (or own brand equivalent – the strands rather than the flakes), currants (or we like mixed peel) and milk. 1/2 mug of soft brown sugar
Mix together in a bowl, make sure all ingredients submerged in the milk. Cover and leave for 1 hour.
Add 1 mug of self raising flour. Stir in well. Scrape into a loaf tin. I use a silicon loaf tin inside a conventional one.
Cook for 1 hour (or thereabouts) on the bottom shelf at 160 degrees (fan oven not sure for other ovens). Check that it’s done by inserting a skewer at the corners and the middle.
Leave in the tin for about 30 minutes then turn out onto a wire rack. Only cut it warm if you are going to eat it all at once, otherwise, like bread, it goes soggy.
The only issue with this recipe is that no two loaves turn out the same?! But always delicious to eat.
