Spaghetti Bolognese

Saturday’s dinner:

Two 400g trays of leaner British beef mince (Sainsburys)

Red pepper (large) or 2 small

3 small onions

half a “family” tray of mushrooms

two jars of Lloyd Grossman Bolognese sauce (on offer at Morrisons on Friday)

tomato puree (for thickening the sauce which was actually very oily,  won’t be buying that again offer or no offer)

enough spaghetti for 5 people (in fact ours was gluten free but nobody noticed and we couldn’t tell the difference)

Chop up the onions and peppers.  Heat olive oil in large non-stick pan.  Fry onions until translucent.  Add mince,  peppers (deseeded and chopped) stir well to ensure that the mince browns.  Add peeled and sliced mushrooms.  Stir to mix the mushrooms in.  Pour in jars of sauce and thicken with puree to taste.  Snap spaghetti sticks in half (easier to eat that way) and cook to taste in large saucepan of boiling water.  Stir so it doesn’t clump together (is that just the gluten free that does that??).  Drain and share into bowls.  Top with generous dollops of sauce (and grated cheese if you remember/have time/are not eschewing cheese for dietary/health reasons).

You could serve it with a nice tossed green salad if you feel that it doesn’t have enough health benefits on its own (possibly not with the oily pre-packed sauce).

In fact if there had not been an offer on the sauce I probably would have made my own a mix of ketchup,  tinned chopped tomatoes,  tomato puree, salt, pepper and mixed herbs plus oregano.  Everything to taste – afraid I don’t measure it out.
