I can’t remember if I posted this before but here goes
1 bag of small onions, peeled and roughly chopped
1 litre of veg stock (1 litre of boiling water, 2 veg stock pots)
Salt, pepper, chopped garlic and coriander to flavour (not too much of any of them)
Fry the onions until soft but not burnt
Add the seasoning and the stock
Simmer for 30 minutes or so
Liquidise
Serve with nice home made rolls or (my kids’ favourite) garlic baguette in either case fresh from the oven.
