Pumpkin Soup

Insides of 2 medium pumpkins or 1 large one,  2 small onions,  salt, pepper, garlic, ginger (I cheat and buy the frozen ready crushed cubes of both).  1 litre vegetable stock.

Chop and fry onion until translucent.  Add seasoning,  garlic and ginger.  Chop and add pumpkin,  stir regularly.    When pumpkin is just starting to soften add the stock.  Simmer on v low heat for around 1 hour (or until the pumpkin is soft).  Season further it needed.

Liquidise.

Eat!  This could have served at least 6 people.
